Sushi SoccApéro®

Ingredients :

  • 1 bottle SoccApéro®
  • Slices of salmon
  • Green olive tapenade
  • A red pepper
  • A little cauliflower
  • A little red cabbage
  • Half a red onion
  • Rocket

Recipe :

  • Prepare the socca batter following the instructions on the back of the SoccApéro® bottle. Leave to rest in the fridge for an hour, or overnight
  • Pour the socca batter into a pan to form 3 or 4 galette (depending on the size of the pan)
  • Once cooked, transfer to a serving dish and cover
  • Cut the vegetables into small pieces and set them aside
  • Cut the salmon into strips

To assemble the sushi:

  • On each of the galettes, spread a little green olive tapenade around the entire circumference
  • On the bottom edge of the galette, add the vegetables then the slices of salmon and finish with the rocket
  • Roll up the galette tightly, starting from the bottom edge
  • Cut off the extremities to make the roll neater, then slice into 2 cm pieces
