Ingredients :
- 1 bottle SoccApéro®
- Slices of salmon
- Green olive tapenade
- A red pepper
- A little cauliflower
- A little red cabbage
- Half a red onion
- Rocket
Recipe :
- Prepare the socca batter following the instructions on the back of the SoccApéro® bottle. Leave to rest in the fridge for an hour, or overnight
- Pour the socca batter into a pan to form 3 or 4 galette (depending on the size of the pan)
- Once cooked, transfer to a serving dish and cover
- Cut the vegetables into small pieces and set them aside
- Cut the salmon into strips
To assemble the sushi:
- On each of the galettes, spread a little green olive tapenade around the entire circumference
- On the bottom edge of the galette, add the vegetables then the slices of salmon and finish with the rocket
- Roll up the galette tightly, starting from the bottom edge
- Cut off the extremities to make the roll neater, then slice into 2 cm pieces
