La raclette by SoccApéro®
Fancy a melting cheese ? Why not make a raclette with SoccApéro®? This is a quick and easy recipe idea, revisited by the chef Luc Salsedo. But what is Socca ? It is a thin cake, soft on the inside and crispy on the outside, from the Nice culinary tradition of the same name. Made from chickpea flour and cooked in a wood-fired oven, it is eaten in the south of France, in Nice to be precise, as an aperitif or on the go. Enjoy it and have a good raclette!

Ingredients :
- 1 bottle of SoccApéro®.

A raclette machine
-
Raclette cheese
-
Pine nuts
-
Salt and pepper
Recipe :

Prepare your SoccApéro® bottle and turn on the raclette machine.

In one of the baking sheets, pour a little Soccapéro® preparation and leave to set for a few minutes.

When the dough has set add a slice of cheese as usual and let it melt.

Once cooked, add a few pine nuts on top, salt and pepper and enjoy straight away!
Chef’s suggestion: We obviously add a few pieces of raw ham, bresaola or mortadella and a good salad of fresh lamb’s lettuce!
