Socca is a speciality from the south made from chickpea flour. It is vegan and gluten-free. It is most often eaten on the go, outdoors, and allows you to share a moment of conviviality or simply to indulge. And what if making socca at home was possible ?

SoccApéro® has been created to make socca at home in a simple and quick way. You just need to add oil, water and a good dose of energy to shake it all up.

Then there are two ways to cook the socca:

In the pan

You can pan-fry it with a little olive oil. The socca should not be too thin or too thick, you have to find the right balance to avoid that your socca looks like a pancake or an omelette…

Heat your pan. Once it is hot, add a good drizzle of olive oil and pour in the mixture, distributing it evenly. Cook over medium-high heat for 2 minutes on each side, not forgetting to flip or sauté!

The consistency of the socca should be soft on the inside and crispy on the outside. The dough should be similar to pancake dough but never too thin.


You can also bake the socca in the oven and for this method there is no need to turn it over! Preheat the oven to 210°. Put in the oven, for a few minutes, the copper dish brushed with olive oil. Once it is hot, take it out and pour the SoccApéro® mixture, distributing it well. Place in the oven at 210 °C for 10 minutes.

Remove it from the oven when it is golden on the sides. Be careful, it’s hot! Cut it directly on the baking sheet, in the traditional Nice style or in simple squares.


It must be eaten hot to have the right traditional taste. But we don’t advise against eating it warm, but certainly not cold from the fridge!

If your eyes are bigger than your stomach, no problem! You can keep the rest of the socca in the fridge for a few days, but it should not be kept for more than 2 days. Wrap it in cling film and reheat it in the oven for a few minutes.
